「会議で」と言うとき、in the meeting が一般的ですが、これは「会議中に」という会議全体の様子を述べるようなときに使います。
また、at the meeting という表現もありますが、こちらは「出席している」ということです。
この on the meetings は「会議（会談）に伴って」という感じです。
